Karpatka sweet roll

Instruct:

1. Preheat oven to 400°F (200°C). Butter a square baking dish or line it with parchment paper.

2. In a medium pot, bring water and butter to a boil. Reduce heat to low and add flour all at once. Stir vigorously until the mixture forms a ball and separates from the sides of the pan. Turn off the stove and let cool for a few minutes.

3. Beat eggs into the flour one at a time, making sure each egg is well incorporated before adding the next. The dough should be smooth and shiny.

4. Spread the dough evenly onto the prepared baking dish, using a spatula to smooth the surface.

5. Bake in the preheated oven for about 30 to 35 minutes or until the dough puffs and turns golden brown. Remove from oven and let cool completely.

6. While the dough cools, prepare the custard filling. In a pan, heat the milk until hot but not boiling. In another bowl, mix together the sugar, cornstarch, and egg yolks until combined. 7. Slowly pour the hot milk into the egg mixture, stirring constantly. Return the mixture to the pot and cook over medium heat, stirring constantly until the cream thickens. Remove from heat and stir in vanilla extract. Let the cream cool completely. 8. Once the dough and custard have cooled completely, cut the dough in half horizontally, creating two layers.

9. Spread the custard evenly over one layer of dough, then place the second layer on top.

11. Refrigerate for at least a few hours or overnight so the flavors blend and the dough softens slightly.
