Preheat oven to 425 degrees Fahrenheit.
Pat the wings dry with a paper towel until completely dry.

Combine all the ingredients for the rub in a large bowl, add the chicken wings and stir to combine. Brush with olive oil.
Line a baking sheet with foil, place parchment paper on top, and arrange the wings in a single layer, using two sheets of baking paper if necessary. Bake for 35 minutes, then 20 minutes on the other side.

Honey garlic sauce:

Meanwhile, combine sauce ingredients in a small skillet and heat over medium heat. Once it boils, reduce the heat and simmer until the sauce thickens slightly and coats the back of a spoon, about 10 minutes.
Mix the wings with the sauce.

Remove the wings from the oven, toss with the sauce, and return to the oven for another 10 minutes. After 5 minutes, flip it to the other side.
Fry for a few minutes. Let cool for 10 minutes. The sauce will thicken as it cools. Stir the wings every few minutes to coat them with the sauce as they thicken.
