Greek Chicken Gyros

Ingredient:

    • 2 lbs chicken thigh fillets, boneless and skinless
    • 3 large garlic cloves, chopped (~3 teaspoons)
    • 1 tablespoon white wine vinegar (or red wine vinegar or apple cider vinegar)
    • 3 tablespoons lemon juice

    • 1 tablespoon extra virgin olive oil
    • 3 tablespoons Greek yogurt, preferably plain
    • 1 1/2 tablespoons dried oregano leaves
    • 1 teaspoon salt

Black pepper

    • 2 cucumbers (to make about 1/2 to 3/4 cup grated cucumbers after juicing)
    • 1 1/4 cups Greek yogurt, preferably plain
    • 1 teaspoon lemon juice

    • 1 tablespoon extra virgin olive oil (or more if you want it richer)
    • 1 clove of garlic, chopped
    • 1/4 teaspoon salt

Black pepper
    • 3 tomatoes, seeded and diced
    • 3 cucumbers, diced
    • 1/2 Spanish red onion, peeled and chopped
    • 1/4 cup fresh parsley leaves (optional)
    • Salt and pepper

  • 4 to 6 pita bread or flat bread
