Greek Chicken Gyros
Ingredient:

- 2 lbs chicken thigh fillets, boneless and skinless
- 3 large garlic cloves, chopped (~3 teaspoons)
- 1 tablespoon white wine vinegar (or red wine vinegar or apple cider vinegar)
- 3 tablespoons lemon juice

- 1 tablespoon extra virgin olive oil
- 3 tablespoons Greek yogurt, preferably plain
- 1 1/2 tablespoons dried oregano leaves
- 1 teaspoon salt

- 2 cucumbers (to make about 1/2 to 3/4 cup grated cucumbers after juicing)
- 1 1/4 cups Greek yogurt, preferably plain
- 1 teaspoon lemon juice

- 1 tablespoon extra virgin olive oil (or more if you want it richer)
- 1 clove of garlic, chopped
- 1/4 teaspoon salt

- 3 tomatoes, seeded and diced
- 3 cucumbers, diced
- 1/2 Spanish red onion, peeled and chopped
- 1/4 cup fresh parsley leaves (optional)
- Salt and pepper
- 4 to 6 pita bread or flat bread
