CARROT CAKE SHEET CAKE: SMOOTH, MOIST & RIDICULOUSLY DELICIOUS

½ cup vegetable oil

 

¼ cup (1 ½ sticks), unsalted butter, melted and cooled

 

1 cup sugar

 

¾ cup brown sugar

 

4 eggs

 

2 teaspoons vanilla extract

 

2 cups all-purpose flour

 

2 teaspoons baking soda

 

¼ teaspoon baking powder

 

2 teaspoons cinnamon

 

½ teaspoon nutmeg

 

½ teaspoon salt

 

4 cups grated carrot

 

¼ cup raisins

 

Pecans finely chopped to ¼ cup
