Banana French Toast Roll Ups

Ingredients:

  • 10 slices of white bread, preferably slightly stale
  • 3 slices of bananas
  • 2 large eggs
  • 3 tablespoons milk
  • 1 tablespoon sugar
  • 3 tablespoons butter

For the sugar-cinnamon mixture:

  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon

Preparation:

  1. Melt 1 tablespoon butter. Add the banana slices and 1 tablespoon sugar. Roasted golden brown.
  2. Mix the remaining sugar and cinnamon in a bowl. In another bowl, whisk together eggs and milk.
  3. Flatten the bread slices with a rolling pin and spread 2 teaspoons of the banana mixture on one edge. Brush the other side with the beaten egg.
  4. Wrap the bread tightly around the banana to form small sandwiches.
  5. Melt 1 tablespoon of butter in the pan. Brush the rolls with the egg mixture and fry three or four at a time.Fry evenly on all sides.
  6. Clean the pan and repeat the process until all the rolls are cooked.
  7. Roll the finished rolls in a sugar-cinnamon mixture or sprinkle with powdered sugar.
  8. Serve hot.
