Instructions
Place your potatoes in a suitably sized oven dish and give them a good mizzle of oil painting. Add in 1 tsp Smoked Paprika and Cumin,1/2 tsp Ground Coriander,1/4 tsp Cayenne Pepper and a hefty pinch of Salt & Pepper. Give them a blend to fully cover them. Pop in the roaster at 200C/ 390F for a good 25- 30 mins or until softened with a caramelized spin( timings will depend on the size of your potatoes, so just be watchful).
When the dish has cooled down a little, snare a potato lecher and roughly smash your sweet potatoes. Do n’t mash it into oblivion, you want to keep some of the crisp corridor of the potato. Place to one side.
Take a Tortilla and smoothly brush one side of it with oil painting. Place on a griddle or regular visage waxed side face down. Spread on half of your Sweet Potato crush, top with half your Black sap, 1 sprinkle of rubbish and finish with a squeeze of Lime Juice. Place a alternate Tortilla on top, press down to contain the stuffing and smoothly brush the top with oil painting.
At this point turn onto a medium heat and shindig for around 6- 8 mins on each side, or until nice and golden. If you tap on the Quesadillas it should sound slightly concave and brickle .
Serve with any fresh condiments and sides( suggestions in constituents).
