Ritz S’mores Cookies

  • 24 Ritz crackers
  • 12 marshmallows, cut in half
  • 6 ounces milk chocolate, broken into 24 squares
  • 1/4 cup crushed graham crackers
  • Cooking spray or melted butter (optional)


  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Place half of the Ritz crackers on the prepared baking sheet, facing down.
  4. Top each cracker with a square of milk chocolate.
  5. Place a marshmallow half on top of the chocolate.
  6. Top each marshmallow with another Ritz cracker, facing up, to create a sandwich.
  7. If desired, lightly brush the top of each sandwich with melted butter or cooking spray to help with browning.
  8. Bake in the preheated oven for 3-5 minutes or until the marshmallows are puffed and golden brown. Keep a close eye to prevent burning.
  9. Remove from the oven and let the cookies cool slightly.
  10. Sprinkle crushed graham crackers over the top of each cookie while the marshmallows are still gooey.
