Basic Crepes Recipe

Instructions:

 

  1. Prepare Batter: In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the eggs. Whisk the eggs into the flour, gradually incorporating the milk and water until you have a smooth batter. Stir in the melted butter and vanilla extract (if using). Let the batter rest for about 15-30 minutes. This allows the flour to fully hydrate and can improve the texture of the crepes.
  2. Heat Pan: Place a non-stick skillet or crepe pan over medium heat. You want the pan to be hot but not smoking.
  3. Grease Pan: Lightly grease the pan with a small amount of butter or oil. You can use a paper towel to spread the butter evenly across the surface.
  4. Pour Batter: Pour about 1/4 cup of batter into the center of the pan, immediately lifting the pan off the heat and tilting and swirling it to spread the batter thinly and evenly across the bottom.
  5. Cook Crepe: Place the pan back on the heat and cook the crepe for about 1-2 minutes, or until the edges start to lift slightly and the bottom is lightly golden. Use a spatula to carefully flip the crepe and cook for an additional 30 seconds to 1 minute on the other side.
  6. Repeat: Transfer the cooked crepe to a plate and continue with the remaining batter, greasing the pan as needed. Stir the batter occasionally between cooking to ensure it remains well mixed.
  7. Serve: Once all the crepes are cooked, you can serve them warm with your choice of fillings and toppings. Popular options include Nutella, fresh fruits, whipped cream, jam, savory fillings like cheese and ham, or a sprinkle of sugar and a squeeze of lemon juice.
