INGREDIENTS
- 2 eggs.
- 1 cup sugar.
- 1/2 cup melted butter.
- 1 cup eggnog.
- 2 tbsp.Rum flavored extract.
- 1 teaspoon vanilla extract.
- 2 ¼ cups all-purpose flour.
- 2 tbsp.Baking powder.
- 1/2 teaspoons salt.
- 1/4 teaspoon nutmeg.
INSTRUCTIONS
Preheat the oven to 175°C (350°F). Butter the bottom of a 5-by-9-inch pan.
Beat the eggs in a large bowl; Add sugar, melted butter, eggnog, rum extract and vanilla extract. Mix the flour with the yeast, salt and nutmeg and stir until you have an eggnog-based mixture. Stir just enough to combine. Pour into the mold.
Bake for 40-60 minutes, until a toothpick inserted into the center comes out clean. Allow to cool on the baking tray for 11 minutes, then place on a wire rack and allow to cool. Wrap in aluminum foil & Keep refrigerated.
