Tropical Coconut Chicken with Lemon Garlic Sauce

Directions:
In a bowl, whisk together coconut milk, olive oil, minced garlic, lemon juice, lemon zest, honey, ginger, salt, and pepper.
Place chicken breasts in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your grill or skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off.
Cook chicken for 6-7 minutes on each side, or until fully cooked and juices run clear.
Serve garnished with fresh cilantro and a drizzle of the remaining lemon garlic sauce.
