Rich and Hearty Irish Beef Stew with Cheddar Herb Dumplings

Directions:

  1. In a large pot, heat olive oil over medium heat. Add beef and brown on all sides. Remove from pot and set aside.
  2. In the same pot, add onions and garlic; sauté until onions are translucent.
  3. Add carrots, potatoes, and mushrooms, cooking for another 5 minutes.
  4. Return the beef to the pot and stir in Guinness, beef broth, tomato paste, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for about 1.5 hours, or until the beef is tender.
  6. While the stew simmers, prepare the dumplings. In a bowl, mix flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.
  7. Stir in cheddar cheese and chives, then gradually add milk until a soft dough forms.
  8. Drop spoonfuls of dumpling dough onto the simmering stew. Cover and cook for an additional 15-20 minutes, until dumplings are fluffy.
  9. Stir in fresh parsley before serving.
