Directions:
- Begin by boiling the potato sticks in salted water for about 5-7 minutes, or until they are slightly tender but still firm. Drain and pat them dry with a paper towel.
- Set up a breading station: In one bowl, mix flour, garlic powder, onion powder, salt, and pepper. In a second bowl, whisk the egg. In a third bowl, combine the breadcrumbs, mozzarella cheese, and Parmesan cheese.
- Dip each potato stick into the flour mixture, coating it evenly, then dip it into the egg, and finally coat it with the breadcrumb and cheese mixture.
- Heat the vegetable oil in a deep pan or frying pan over medium-high heat. Once the oil is hot, carefully add the coated potato sticks in batches, frying until golden brown and crispy, about 3-4 minutes per batch.
- Remove the fried sticks from the oil and place them on a paper towel-lined plate to drain excess oil.
- Garnish with freshly chopped parsley (optional), and serve immediately with your favorite dipping sauce, such as ranch or marinara.
