KFC ORIGINAL SECRET CHICKEN RECIPE

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon celery salt
  • 1 tablespoon dried mustard
  • 1 tablespoon white pepper
  • 1 tablespoon black pepper
  • 1 tablespoon salt

For the Buttermilk Soak:

  • 2 cups buttermilk

Instructions:

  1. In a large bowl, mix all the coating ingredients (flour, paprika, rosemary, thyme, garlic powder, onion powder, basil, oregano, celery salt, dried mustard, white pepper, black pepper, and salt). This is your KFC-style blend of herbs and spices.
  2. In another bowl, pour the buttermilk. Soak the chicken pieces in the buttermilk for about 20-30 minutes. The buttermilk helps tenderize the chicken and adds a nice tangy flavor.
  3. Heat the vegetable oil in a deep fryer or a large, deep skillet to around 350-375°F (175-190°C).
  4. Remove the chicken from the buttermilk and let the excess liquid drip off.
  5. Coat each piece of chicken thoroughly with the spice mixture, pressing the mixture onto the chicken to ensure good coverage.
  6. Carefully place the coated chicken into the hot oil, a few pieces at a time, and fry until the chicken is golden brown and cooked through (internal temperature of 165°F or 74°C). The cooking time will vary depending on the size and type of chicken pieces, but it’s typically around 15-20 minutes.
  7. Remove the fried chicken and drain it on paper towels or a wire rack to remove excess oil.
  8. Serve your homemade “KFC-style” fried chicken hot, and enjoy the crispy, flavorful result.
