Ingredients
Cake:
- 3 eggs
- 2 cups of sugar
- 3 cups of flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. baking powder
- ½ tsp. salt
- ½ tsp. grated nutmeg
- 1 cup of oil
- 4 cups of grated carrot
- 1 cup of chopped walnuts
Frosting:
- 200 grs. butter
- 200 grs. cream cheese
- 3 cups of powdered sugar
- Zest and juice of 1 lemon
- 2 teaspoons vanilla
Preparation
- Cake Preparation:
- Beat the eggs and sugar until very fluffy.
- Add the oil and grated carrots.
- In a separate bowl, mix all the dry ingredients and the finely chopped walnuts.
- Add the flour mixture to the egg mixture, stirring until all the ingredients are integrated.
- Pour the mixture into a greased and floured mold.
- Bake in a moderate oven for approximately 40 minutes.
- Frosting:
- Melt the butter and let it cool.
- Add cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla to form the frosting.
- Assembly:
- Unmold the cake when it is cold.
- Cover with the prepared frosting.
- Decorate with carrot zest.
