Heavenly Carrot Cake

Ingredients

Cake:

  • 3 eggs
  • 2 cups of sugar
  • 3 cups of flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. grated nutmeg
  • 1 cup of oil
  • 4 cups of grated carrot
  • 1 cup of chopped walnuts

Frosting:

  • 200 grs. butter
  • 200 grs. cream cheese
  • 3 cups of powdered sugar
  • Zest and juice of 1 lemon
  • 2 teaspoons vanilla

Preparation

  1. Cake Preparation:
    • Beat the eggs and sugar until very fluffy.
    • Add the oil and grated carrots.
    • In a separate bowl, mix all the dry ingredients and the finely chopped walnuts.
    • Add the flour mixture to the egg mixture, stirring until all the ingredients are integrated.
    • Pour the mixture into a greased and floured mold.
    • Bake in a moderate oven for approximately 40 minutes.
  2. Frosting:
    • Melt the butter and let it cool.
    • Add cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla to form the frosting.
  3. Assembly:
    • Unmold the cake when it is cold.
    • Cover with the prepared frosting.
    • Decorate with carrot zest.
