Guinness Beef Stew with Cheddar Herb Dumpling

 

Directions:

  1. Heat oil in a large pot over medium heat. Brown the beef, then remove.
  2. In the same pot, sauté onion, carrots, celery, and garlic until soft.
  3. Stir in tomato paste and flour, cooking for 1-2 minutes.
  4. Add beef, Guinness, and beef broth. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. For the dumplings, mix flour, butter, cheddar, and parsley. Add water until a soft dough forms.
  6. Drop spoonfuls of dough onto the stew. Cover and simmer for 15-20 minutes until dumplings are cooked through.
