Golden Chicken with Pumpkin in a Creamy Sauce

Instructions:
Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden brown on all sides, about 6-8 minutes. Remove and set aside.
In the same skillet, add the garlic and onion, sautéing until softened and fragrant, about 3-4 minutes.
Add the diced pumpkin to the skillet and cook for about 8-10 minutes, or until it starts to soften.
Pour in the chicken broth and let it simmer for 5 minutes, allowing the pumpkin to become tender.
Stir in the heavy cream, paprika, and thyme. Return the cooked chicken to the skillet and let everything simmer together for 5-7 minutes, or until the sauce thickens.
Season with salt and pepper to taste, garnish with fresh parsley, and serve warm.
