Directions:
Preheat your oven to 400°F (200°C).
In a large skillet, heat olive oil and butter over medium heat. Add onions and cook, stirring frequently, for about 15-20 minutes, until they are caramelized and golden brown.
Add the mushrooms, garlic, thyme, salt, and pepper. Cook for another 5-7 minutes until the mushrooms are tender.
Roll out the puff pastry on a floured surface and transfer it to a tart pan or baking sheet. Trim any excess pastry.
Spread the sour cream evenly over the pastry base. Top with the onion and mushroom mixture, followed by the grated Gruyère cheese.
Bake in the preheated oven for 25-30 minutes or until the pastry is golden and the cheese is bubbly.
Remove from the oven, let it cool slightly, and garnish with fresh parsley before slicing.
