Directions:
Prepare the White Sauce:
In a saucepan, melt the butter over medium heat. Stir in the flour, cooking for 1-2 minutes.
Gradually whisk in the milk, stirring constantly until the sauce thickens. Add nutmeg, salt, and pepper to taste. Remove from heat.
Cook the Lasagna Noodles:
Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
Assemble the Lasagna:
Preheat your oven to 375°F (190°C).
In a 9×13-inch baking dish, spread a layer of white sauce on the bottom. Place 3 lasagna noodles on top.
Layer half of the shredded chicken, half of the spinach, a third of the mozzarella, and a third of the Parmesan cheese.
Repeat the layers: another layer of white sauce, 3 noodles, remaining chicken, spinach, and cheeses. Top with the last 3 noodles and remaining white sauce. Finish with the remaining mozzarella and Parmesan.
Bake:
Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is bubbly and golden brown.
Serve:
Let the lasagna cool for 10 minutes before slicing. Enjoy!
