Directions:
In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving drippings in the skillet.
In the same skillet, add onion, garlic, and ginger. Sauté until fragrant and softened, about 3-4 minutes.
Add diced chicken, seasoning with salt, pepper, and curry powder. Cook until the chicken is browned on all sides.
Stir in sliced mushrooms and cook for another 5 minutes.
Pour in the coconut milk, stirring to combine. Bring to a simmer and let cook for 10 minutes, allowing the flavors to meld.
Stir in the crispy bacon before serving and garnish with fresh cilantro.
