Chocolate Chip Cookie Dough Ice Cream Cake

Ingredients:

  • 1 package (16 oz) chocolate chip cookie dough, divided
  • 1.5 quarts vanilla ice cream, softened
  • 1 cup mini chocolate chips
  • 1/2 cup hot fudge sauce
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Additional mini chocolate chips and cookie dough chunks for garnish

Directions:

  1. Line the bottom of a 9-inch springform pan with parchment paper.
  2. Press half of the chocolate chip cookie dough into the bottom of the pan to form a crust layer.
  3. Spread softened vanilla ice cream evenly over the cookie dough crust.
  4. Sprinkle mini chocolate chips over the ice cream layer.
  5. Drizzle hot fudge sauce over the mini chocolate chips.
  6. In a mixing bowl, whip heavy cream until soft peaks form.
  7. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  8. Fold in the remaining half of the chocolate chip cookie dough, broken into small chunks.
  9. Spread the whipped cream and cookie dough mixture over the hot fudge layer in the pan.
  10. Sprinkle additional mini chocolate chips and cookie dough chunks over the top.
  11. Cover with plastic wrap and freeze for at least 6 hours or overnight until firm.
  12. Before serving, remove from freezer and let sit at room temperature for 5-10 minutes. Release from springform pan and slice.
