Broccoli cheese balls

PREPARATION:

Combine steamed broccoli, panko, eggs, cheese, scallions, and garlic in a bowl. Mix until well blended and mashed. Add salt and pepper to taste.Form the broccoli mixture into balls and place them on a baking sheet sprayed with non-stick cooking spray.

Lightly spray the surface of the balls with olive oil. Bake in a preheated 400°F oven for about 20 to 25 minutes, or until browned and crispy.

A different take: To mimic the classic broccoli rice casserole, add 1/2 cup cooked white rice to the mixture.
