CRUST
Step 1
palpitation sugar, swab, and 2 mugs flour in a food processor until combined. Add adulation and lard and palpitation until admixture resembles coarse mess with a many pieces of adulation and lard visible, about fifteen 1-alternate beats. With motor handling, mizzle in ginger and 5 ½Tbsp. ice water and palpitation until dough is still crispy but just holds together when squeezed( add 1tsp. water at a time if necessary, but be careful not to outrun dough).
Step 2
Turn out dough onto a work face. Knead 1 – 2 times, pressing just to incorporate any shaggy pieces. Flatten into a 6 ″-wide fragment. Wrap with plastic serape and bite at least 1 hour.
Step 3
Preheat roaster to 425 °. Roll out dough on a smoothly floured work face to a 14 ″ round. Transfer to a 9 ″ pie dish. Pick up edges and allow dough to depression down into dish, letting redundant dough hang over dish. Trim, leaving about a 1 ″ protuberance. Fold protuberance under; pinch and crimp. Chill 30 twinkles.
Step 4
Line dough with diploma paper or antipode, leaving some protuberance. Fill with pie weights or dried sap. Singe until crust is dry around the edges and just beginning to smoothly brown, 25 – 35 twinkles. Precisely remove diploma and weights and reduce roaster temperature to 350 °. Singe until crust is set and beginning to brown in the center, 10 – 15 twinkles. Transfer to a line rack and let cool.
Step 5
Do Ahead Dough can be made 3 days ahead; keep stupefied, or indurate up to 2 months. Crust can be ignited 1 day ahead; tightly wrap and store at room temperature.
stuffing AND ASSEMBLY
Step 6
Preheat roaster to 350 °. Heat pecans on a rimmed baking distance until browned and ambrosial, 8 – 10 twinkles. Let cool.
Step 7
Reduce oven temperature to 325 °. Whisk eggs, sludge saccharinity, brown sugar, molasses, vanilla, and swab in a large coliseum until smooth. sluggishly whisk in melted adulation until combined. Fold in pecans and pour into cooled crust.
Step 8
Singe pie until edges are set and slightly puffed but center is adjourned and wobbles like Jell- O, 55 – 70 twinkles( it will continue to set after baking). Transfer to a line rack and let cool at least 3 hours before slicing. Serve with ice cream.
Step 9
Pie can be ignited 1 day ahead; tightly wrap and chill. Serve warm or at room temperature.
