LEMON CREAM COOKIES

200 grams of flour
1 egg yolk
80g powdered sugar
1 teaspoon lemon zest
1 pinch of baking powder
50g unsalted butter
in lemon cream
100g powdered sugar
2 lemons
50g unsalted butter

In a bowl, mix the soft butter and powdered sugar until a homogeneous mixture forms.
Add lemon zest and egg yolk and continue mixing.
Finally, add the flour and baking powder and mix well until you get a homogeneous dough. Form a ball and place the cookie dough in the refrigerator for 10 minutes.
After this, roll out the dough on a floured surface to a thickness of 1 cm. Then, with the help of a round cutter, shape the cookies.
On a silicone mat, place the cookies and bake them at 170°C for 20 minutes. When they are ready let them cool.
For the lemon filling, in a bowl, beat the softened butter with the icing sugar and the lemon juice, until a smooth and homogeneous texture is obtained.
Finally, introduce the previous filling into a pastry bag, put a little cream on one of the cookies and place another on top, as if they were alfajores. Repeat this process with everyone.
