Cauliflower has become a popular “healthier” option in stores, but it usually contains hidden starches or even artificial preservatives. Homemade ones are much better!
If you love healthy, flavorful foods or offer vegetables to your kids (or other family members!), this kids cauliflower recipe is for you. Cauliflower cakes are soft on the inside, crispy on the outside, and super easy to make!
INGREDIENTS:

- 2 cups grated fresh cauliflower
- 1/4 cup almond flour

- 1/4 cup grated Parmesan
- 1 egg
- 1/4 teaspoon garlic powder
- salt and pepper to taste
- oil for frying
INSTRUCTIONS:

- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, squeeze excess moisture from the grated cauliflower using cheesecloth or a clean tea towel.
- Add the almond flour, parmesan, egg, garlic powder, salt and pepper to the cauliflower and mix until well combined.
- Using a cookie scoop or teaspoon, form schnitzels from the mixture and place them on the prepared baking tray. They should have about 24 children.
- Cook for 15 minutes, turning halfway through, until golden brown and firm.
- Heat a dash of oil in a pan over medium heat. Fry in several batches until crispy and golden brown on all sides, turning occasionally. Drain them on absorbent paper and serve them hot with your favorite sauce.
