Zucchini Fritters

INSTRUCTIONS

  • Salt and the chopped zucchini should be combined in a big basin and left to stand for ten minutes. After 10 minutes, squeeze the zucchini to remove the water, then throw the water away.
  • Combine the eggs, minced garlic, scallions, crumbled feta, and black pepper in a separate bowl. Add the almond flour and mix well.
  • Pan frying Heat a sizable pan to a medium-high temperature. Include 1 tablespoon of oil. Scoop batter into the pan using an ice cream scoop or a large spoon, and cook for 2-3 minutes per side, or until golden crispy and well cooked. Repeat the process in a pan lined with paper towels.
  • To bake, preheat the oven to 400 degrees Fahrenheit, line 2 sizable baking sheets with parchment paper, and coat the parchment paper with cooking spray. Spread the batter out on a sheet pan. Add additional frying spray to the top. 20 minutes of baking, with a halfway turn.
  • Heat the air fryer to 375°F before using it. Put the fritters in a single layer on the heated Air Fryer mesh. Use oil to brush or cooking spray to spray. For 8 minutes, cook. The fritters should be crispy and golden when cooked for an additional 4-5 minutes after turning.
  • Lemon wedges and freshly chopped herbs should be garnished before serving. Serve with your preferred dip, cold yogurt, sour cream, or tzatziki.
