This dish was an instant hit with guests, there no leftovers

Ingredients:
1 package cake mix, either white or yellow (~15 ounces)
1/2 cup vegetable oil
2 eggs
1 cup water
1 teaspoon vanilla extract and 1 teaspoon of lemon extract (optional)
2 packs instant lemon pudding, ~3 ounces each
2 cups chilled milk
1 1/4 cups cold water
1 teaspoon grated lemon peel

 

Instructions:

1. Preheat your oven to 350°F grease 9×13 casserole dish with butter or cooking spray.
2. In a mixing bowl, combine the cake mix, eggs, water, vegetable oil, vanilla essence, and lemon essence (if using). Mix until smooth.
2. In another bowl, whisk together the instant lemon pudding mixes, chilled milk, lemon zest, and cold water until well combined.
3. In casserole dish, spread pudding mixture in. Follow with cake mixture.
4. Place the casserole dish in the preheated oven and bake for 50 mins, or until the cake is set.
Remove from the oven and let it cool slightly.
Serve the lemon lava cake warm, topped with a scoop of vanilla ice cream, a dusting of powdered sugar, or a dollop of whipped cream.
