Instructions:
Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin papers.
In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, and cinnamon.
Add the cubed bread into the egg mixture, gently folding to ensure all bread is soaked in the mixture. Let it sit for 10 minutes.
Divide the soaked bread mixture evenly among the muffin cups.
In a small bowl, mix the melted butter and brown sugar, then drizzle over the top of each muffin.
Bake for 25-30 minutes, or until the muffins are golden and set.
While the muffins are baking, prepare the topping by mixing together the granulated sugar and cinnamon. Once the muffins are done, brush them with melted butter and sprinkle the cinnamon sugar mixture on top.
