Strawberry Cheesecake

This amazing strawberry cheesecake recipe features just 8 ingredients, a delicious almond crust, and a rich cheesecake filled with fresh strawberries.


▢1.5 cups almond meal or almond flour
▢4 tablespoons salted butter, melted

▢2 tablespoons Joy Filled Eats sweetener (or see alternatives in recipe notes)
▢16 ounces cream cheese

▢½ cup sour cream
▢ 3 eggs
▢2 teaspoons vanilla
▢¾ cup Joy Filled Eats sweetener (or see alternatives in recipe notes)
▢1 cup peeled strawberries
▢ 1 cup chopped strawberries



Preheat oven to 350°.
Combine the crust ingredients in a food processor and mix well. Press into the bottom and sides of a 20cm springform pan. Bake the base for 10 minutes until the dough is lightly golden brown.
In the meantime, grind the cream cheese in a food processor until smooth.Add cream, eggs, vanilla and sweetener. Mix until well combined, scraping down the sides as necessary.

Once the cake is partially baked, add half the filling. Then put the strawberries in a food processor and mix with the remaining filling. Spread with regular cheesecake topping.

Cook for 1 hour – 1 hour 20 minutes or until the center stops wobbling. Allow to cool to room temperature.
Before serving, the cheesecake should be kept in the refrigerator for 3-4 hours.
