Description

Slow Cooker Beef Curry in a Coconut-Spice Sauce – rich, fragrant, and served over rice. Easy comfort food with flavor-packed perfection.


Ingredients

Scale

2 lbs braising steak, cubed

1 onion, diced

3 garlic cloves, minced

1 tbsp fresh ginger, grated

1 tbsp turmeric

1 tsp cumin

1 tsp paprika

½ tsp cinnamon

1 can (13.5 oz) coconut milk

1 tbsp tomato paste

Salt, pepper, and lime juice to taste

1 bay leaf

2 cups jasmine rice (cooked separately)


Instructions

  1. Sear beef cubes in a skillet until browned.

  2. Add onion, garlic, ginger, and spices to slow cooker.

  3. Layer beef over spices.

  4. Pour in coconut milk and tomato paste. Stir gently.

  5. Add bay leaf and cook on low for 6–8 hours.

  6. Before serving, add lime juice and fresh cilantro.

 

Serve hot over steamed jasmine rice.
