I’m always looking for new ways to enjoy some of my favorite foods and these Shrimp Burrito Bowls is one of those! Loaded with the delicious flavors of pickled onions, roasted corn, black beans and shrimp make these perfect for an easy and delicious weeknight dinner.

I’m always looking for new ways to switch up my weeknight dinners. I want something that’s going to be quick and easy while also super satisfying and nutritious. That’s one reason why I love these Shrimp Burrito Bowls! They are also meal prep friendly, dairy free and packed with protein! You can prep a lot of these ingredients ahead of time so it’s easy to assemble when the time comes.

There are many ways to switch up these bowls with ingredients that you already have on hand or that you prefer. Don’t like brown rice? Try this with quinoa or cauliflower rice! Want to make a sauce to drizzle on top? Try my Cashew Cilantro Sauce.

What you need for Shrimp Burrito Bowls:

  • Frozen Shrimp (I like to use the Argentinian Shrimp from Trader Joe’s)
  • Arugula
  • Brown Rice
  • Black Beans
  • Tomatoes
  • Pickled onions
  • Brown Rice
  • Cilantro
  • Frozen Roasted Corn (I use the bag from Trader Joe’s!)
  • Lime

What you need for the sauteed shrimp:

  • Paprika
  • Chili powder
  • Garlic Powder
  • Cayenne
  • Onion Powder
  • Sea salt
  • Black Pepper
  • Olive oil

How to make burrito bowls:

  1. Start by preparing your shrimp. I used the frozen Argentinian Shrimp from Trader Joe’s but you can use any shrimp here! Be sure to heat your pan with a little oil before placing the shrimp on the pan.
  2. Mix together seasonings: chili powder, paprika, garlic powder, cayenne, onion powder, sea salt, black pepper.
  3. Place shrimp on the pan to saute. Add seasonings.
  4. Heat up brown rice in the microwave or cook according to package.
  5. Prepare roasted corn. I used the frozen roasted corn from Trader Joe’s. You can use any kind here!
  6. Prepare bowls by adding arugula, brown rice, roasted corn, black beans, tomatoes, sautéed shrimp, pickled onions and cilantro.

How to store your leftover bowl ingredients:

You can choose to make these bowls ahead of time and store all of the ingredients together for easy grab and go meal prep. Or you can store them in separate containers to easily assemble when meal time comes around. I like to use these containers for a variety of sizes. Or these are great for grab and go!

If you want to switch up these burrito bowls, try these options:

  • Use a different protein!
  • Try using cauliflower rice or quinoa instead of brown rice
  • Make your own sauce or drizzle your favorite sauce on top.

How to make pickled onions:

Pickled onions add the best flavor to everything, but especially to this burger bowl! Start by chopping up the red onion in half and then into some thin “C” slices. Set aside to make the brine. Take 6oz of water and set to a boil on the stove. Put in 1 tbsp salt with 1 tbsp white sugar into the mason jar with red onion. Pour in the boiled water and then fill the rest of the jar with white vinegar. Place lid on mason jar and give it a spin to let onions soak it up. Store in the fridge for the week!

These Shrimp Burrito Bowls make for an easy weeknight dinner that’s full of flavor. All the tastes of a burrito in a delicious bowl!

Ingredients

  • 12-15 frozen shrimp
  • 1 cup brown rice
  • 2 cups arugula
  • 1/2 avocado
  • 1/2 cup black beans
  • 1/2 cup roasted corn
  • 1/2 cup pickled onions
  • 1/2 lime
  • 1 tbsp fresh cilantro
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • dash of cayenne

Instructions

  1. In a heated pan with olive oil, add frozen shrimp.
  2. Mix together seasonings: chili powder, paprika, garlic powder, cayenne, onion powder, sea salt, black pepper.
  3. Add seasonings to shrimp. Cook shrimp on both sides until cooked through. 6-8 minutes.
  4. Heat up brown rice in the microwave or cook according to package.
  5. Prepare roasted corn. I used the frozen roasted corn from Trader Joe’s. You can use any kind here!
  6. Prepare bowls by adding arugula, brown rice, roasted corn, black beans, tomatoes, sautéed shrimp, pickled onions and cilantro.
  7. Add avocado, fresh lime and red pepper flakes.

Notes

I used Trader Joe’s Frozen Argentinian Shrimp, frozen Roasted Corn and frozen brown rice. Use what you like here!

I recommend meal prepping your pickled onions ahead of time.
