  • 2 Chicken Breasts
  • Salsa Verde
  • Basmati Rice
  • Red Onion
  • Cilantro
  • Lime
  • Black Beans
  • Roasted Corn
  • Romaine Lettuce
  • Cherry Tomatoes

How to make these chicken bowls:

  1. Start by preparing your crockpot chicken. You’ll want at least 4hrs for the chicken to cook in the crockpot. Add chopped red onion, chicken breast and salsa verde to the crockpot.
  2. Let it cook on high for 4+ hrs until you can easily shred with a fork.
  3. Prepare cilantro lime rice by cooking basmati rice according to package.
  4. In a bowl, add rice, lime juice and chopped cilantro.
  5. In a bowl, add cilantro lime rice, romaine lettuce, black beans, tomatoes, roasted corn and shredded salsa verde chicken.
  6. Enjoy!

  • 1 cup red onion, chopped
  • 1/2 tsp sea salt
  • 4 cups cooked basmati rice

  • 1/2 cup cilantro, chopped
  • 1/4 tsp garlic powder
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup roasted corn, rinsed and drained
  • 1/2 cup tomatoes, chopped
  • 1 cup romaine lettuce

Instructions

  1. In a crockpot, add chicken breasts, salsa verde, sea salt and chopped red onion. Let it cook on high for 4+ hrs until you can easily shred with a fork.
