These pizza chips are an easy recipe with just 2 ingredients. They’re delicious and fun, and you don’t have to be on a keto diet to enjoy them!

INGREDIENTS

    • 2/3 cup (80 g) low-moisture mozzarella, grated
    • 48 slices (21 g) mini peppers

INSTRUCTIONS

    • Preheat the oven to 350°F. Butter the inside of a mini muffin tin. This recipe makes 16 chips, so you only need to grease 16 cups.
    • Add 2 teaspoons of mozzarella to each greased cup. Lightly pat the mozzarella into the cups.Place 3 slices of mini peppers on each chip. Sprinkle each chip with a little Italian seasoning if desired. This is optional but adds more flavor.
    • Cook the chips for about 8 minutes or until the edges are golden brown. Let the chips cool in the muffin tin until they are cool enough to handle.Remove the chips from the pan. I like to place the chips on a plate lined with paper towels to absorb any excess oil from the cheese and peppers. Serve the pepper chips hot. They can be eaten raw or served with marinara sauce.

NOTES

  • Mozzarella can be replaced with other cheeses. More details can be found in the article. If you use mozzarella, make sure you use grated, low-moisture mozzarella. I used Kirkland low moisture part skim mozzarella.
  • If you make these chips with mozzarella, the texture will not be crispy.For more information, see the Chip Consistency section of the article. To make a crispy version, substitute grated Parmesan cheese and set oven to 400 F. Bake until chips are lightly browned (about 7-8 minutes). You can also bake them on a baking tray lined with baking paper instead of in a mini muffin tin. They can be baked in a muffin tin, but because the chips become hard and crispy, they are very difficult to remove from the tin.
  • You can also use regular peppers instead of the mini peppers, just use one per chip instead of 3.
  • I served them with Rao’s marinara sauce, which has no added sugar.
