It’s time for all the Gameday snacks and that means all the bite sized deliciousness! These Loaded Smashed Potatoes are made with just a few simple ingredients and are something that everyone will love! Not only can you serve these for an appetizer but they can also be used as a side dish too. The key to making a good smashed potato is to boil the potato before smashing them! You want them to become fork tender before smashing on a parchment lined baking sheet.

What you need for Loaded Smashed Potatoes:

  • Mini Red Potatoes
  • Shredded Sharp Cheddar Cheese
  • Bacon
  • Green Onion
  • Avocado oil spray
  • Sea salt
  • Pepper
  • Garlic powder
  • Ranch dressing

How to make these potatoes:

  1. Start by filling up a pot of water.
  2. Add the red potatoes to a pot of boiling water. Boil for 12-15 minutes until the potatoes are fork tender.
  3. Place potatoes on a parchment lined baking sheet.
  4. Using a small jar or glass, smash the potatoes.
  5. Top with avocado oil spray, sea salt, pepper and garlic powder to coat.
  6. Place in the oven to bake for 15 minutes.
  7. Remove from the oven and top with shredded cheddar cheese and crumbled bacon. Place back in the oven for 3-5 minutes until the cheese has melted.
  8. Top with fresh green onion. Serve with ranch dressing.
  9. Enjoy!

How to store your loaded smashed potatoes:

These potatoes are going to be best to enjoy just after making them. If you have leftovers, I recommend storing in a sealed container in the fridge. I like using these!

If you want to switch up these potatoes, try doing this:

  • Use a different shredded cheese on top!
  • Try your favorite dipping sauce to pair with the potatoes.

Can I use a different potato?

I’ve only made these with red potatoes! I would guess that mini yukon potatoes would work well too!

Yes! If you want to reheat, I recommend the air fryer or the microwave will also work.

  • 14 mini red potatoes
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup green onion
  • 1/2 cup bacon, crumbled
  • Avocado oil spray
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Instructions

  1. Boil red potatoes for 12-15 minutes until they are fork tender.

  3. Cook bacon according to package. Chop into small pieces.
  4. Spread red potatoes on a parchment lined baking sheet. Using a glass or mason jar, smash each potato.
