Golden Aussie-style meat pies with rich beef gravy, perfect for cozy dinners and family meals


Ingredients

“2 lbs beef chuck, cut into small cubes”,

“1 large onion, chopped”,

“3 cloves garlic, minced”,

“2 tbsp Worcestershire sauce”,

“1 tsp fresh thyme”,

“2 tbsp tomato paste”,

“1 1/2 cups beef stock”,

“2 sheets puff pastry or shortcrust pastry”,

“1 egg, beaten for egg wash”,

“Salt and pepper to taste”


Instructions

  • Prepare the Beef Filling:

    • In a skillet, brown the beef cubes over medium heat. Set aside.

    • Sauté onion and garlic until fragrant and translucent.

    • Stir in tomato paste, Worcestershire sauce, and thyme.

    • Return beef to the skillet and pour in beef stock. Simmer for 40–45 minutes until tender and gravy thickens. Season with salt and pepper.

  • Prepare the Pastry:

    • Preheat oven to 400°F (200°C).

    • Roll out pastry sheets and cut to fit pie tins.

    • Line tins with pastry, fill with beef mixture, and cover with top pastry. Crimp edges to seal. Brush tops with beaten egg.

 

  • Bake the Pies:

    • Bake in preheated oven for 25–30 minutes or until golden brown and flaky.

    • Remove from oven and let rest 5 minutes before serving.

Notes

Variations: Add peas, carrots, or mushrooms to the beef filling for extra flavor.
Make-Ahead: Prepare filling a day in advance; assemble and bake when needed.
Freezing: Freeze unbaked pies for up to 1 month; bake directly from frozen with a few extra minutes added.
Serving: Serve with mashed potatoes, steamed vegetables, or your favorite gravy.
