Easy Pizza Muffins: The Ultimate Recipe

Directions:
Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease it with oil.
In a large mixing bowl, whisk together the flour, baking powder, oregano, garlic powder, basil, salt, and pepper.
In a separate bowl, beat the egg and mix it with the olive oil and tomato sauce.
Pour the wet ingredients into the dry ingredients and stir until combined.
Add the diced bell pepper, onion, and pepperoni (if using), and fold them into the batter.
Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
Top each muffin with a little extra grated mozzarella cheese.
Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
Let the muffins cool for 5 minutes before serving.
