Crispy Cheesy Mashed Potato Puffs

Directions:
Preheat your oven to 375°F (190°C). Grease a baking sheet with a little oil or line with parchment paper for easy cleanup.
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, milk, eggs, garlic powder, onion powder, salt, and pepper. Mix well until everything is fully combined and smooth.
Using your hands or a spoon, form the mashed potato mixture into small puffs, about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet.
Lightly dip each puff into the melted butter and then roll them in the breadcrumbs to coat evenly.
Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
Once baked, remove the puffs from the oven and sprinkle with chopped chives for a fresh, herby finish.
Serve immediately and enjoy!
