Ingredients
1 lb fresh green beans, trimmed (or use frozen)
1 lb baby potatoes, halved (red or Yukon Gold work best)
6 slices of bacon, chopped
2 cloves garlic, minced
2 tablespoons ranch seasoning mix
2 tablespoons olive oil or butter
Salt and black pepper, to taste
Fresh parsley for garnish (optional)
Instructions
Cook the Bacon:
In a large skillet over medium heat, cook chopped bacon until crispy.
Remove the bacon with a slotted spoon and place it on a plate lined with paper towels. Leave about 2 tablespoons of bacon grease in the skillet.
Cook the Potatoes:
In the same skillet, add halved potatoes. Season with a pinch of salt and pepper.
Cook over medium heat for about 10 minutes, stirring occasionally, until the potatoes start to soften and brown.
Add Green Beans and Garlic:
Add trimmed green beans to the skillet with the potatoes. Cook for another 8-10 minutes, stirring frequently, until the beans are tender but still slightly crisp.
Add minced garlic and cook for 1 more minute, until fragrant.
Season and Combine:
Sprinkle the ranch seasoning mix over the vegetables and stir to coat evenly. Add olive oil or butter if the skillet seems dry.
Return the cooked bacon to the skillet and toss everything together. Adjust seasoning with salt and pepper, if needed.
Serve:
Transfer to a serving dish and garnish with fresh parsley for a pop of color. Serve warm.
Tips:
For a smoky twist, use smoked paprika or a dash of liquid smoke.
Add a sprinkle of shredded Parmesan cheese for extra flavor.
