Coconut Curry Chicken Skewers for Grilling

Directions:
In a large bowl, whisk together coconut milk, red curry paste, soy sauce, lime juice, honey, garlic, ginger, salt, and pepper to create the marinade.
Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked skewers.
Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Remove from the grill and let them rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
