Tis the season for all the chocolate peppermint flavors! I will do this combo any time of year, but especially love it during the holidays. These Chocolate Peppermint Bars make for an easy snack to meal prep for the week or a treat to bring to your holiday gathering. Made with a few simple ingredients and you feel good eating them too!

I love having a simple snack to keep around during the week! One that’s made with a few ingredients, great to keep in the fridge and easy to snack on. That’s where these Chocolate Peppermint bars come in! Made with many pantry ingredients and the perfect thing to keep in the fridge or freezer to snack on during the week. I love the hint of peppermint in here for a festive and delicious snack around the holidays too.

These last in the fridge for the week or can be moved to the freezer to keep for longer! There are many ways to switch them up by leaving off the chocolate on top, adding crushed peppermint or cutting up into bars rather than bites!

What you need to make these bars:

  • Raw Almonds
  • Medjool Dates
  • Peppermint Flavor
  • Maple Syrup
  • Cacao Powder
  • Mini Chocolate Chips
  • Cinnamon
  • Sea Salt
  • Coconut Oil
  • Chocolate Chips

How to make these Chocolate Peppermint Bars:

  1. In a food processor, combine almonds and dates. Process on high. You want to make sure they are fully processed before adding anything else in.
  2. Add cacao powder, maple syrup, peppermint flavor, cinnamon and sea salt. Blend.
  3. Lightly mix around mini chocolate chips.
  4. Using a parchment paper lined 8×8 dish, press down your chocolate peppermint mix.
  5. Place in the fridge for 10-20 minutes.
  6. Melt chocolate chips with coconut oil.
  7. Pour melted chocolate on top of dish to completely coat. Place back in the fridge for 30 minutes.
  8. Cut into bites or larger bars.
  9. Enjoy!

How to store your peppermint bars for the week:

It’s best to store your bars in a sealed container in the fridge. I like using these! I also love using these reusable bags for easy storage in the fridge or freezer.

If you want to switch these up, try doing this:

  • Leave the chocolate off the top
  • Add a drizzle of white chocolate or crushed candy cane for a more festive treat.
  • Package them up in a cute holiday bag to gift to a friend or family member.

  • 1 1/3 cup raw almonds
  • 1 1/2 cup pitted medjool dates (about 15)
  • 1 tsp peppermint flavor
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 4 tbsp cacao powder
  • 1/3 cup mini chocolate chips
  • dash of sea salt
  • for chocolate topping: 1/2 cup semi sweet chocolate + 1 tbsp coconut oil
