Description

Chicken spinach and mushroom low carb oven dish that’s creamy, cozy, and keto-friendly. A perfect comfort meal under 5g net carbs


Ingredients

Scale

1.5 lbs boneless, skinless chicken thighs

3 cups fresh spinach OR 1.5 cups frozen spinach (thawed and squeezed dry)

2 cups cremini or white mushrooms, sliced

2 tbsp olive oil

2 cloves garlic, minced

1/2 cup shredded mozzarella or Parmesan cheese (optional)

Salt and pepper to taste

Optional: 2 tbsp heavy cream or cream cheese for extra richness

Optional: Red pepper flakes, lemon zest, or Italian seasoning


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a 9×13-inch baking dish with olive oil or butter.

  3. Season chicken thighs with salt, pepper, and minced garlic. Place in baking dish.

  4. Layer mushrooms evenly over the chicken.

  5. Add spinach on top. If using frozen spinach, make sure it’s fully drained.

  6. Optional: Drizzle with cream or add cheese for a richer texture.

  7. Bake uncovered for 30–35 minutes, until chicken reaches 165°F internally.

  8. For a golden top, broil for 3–4 minutes before removing from oven.

 

Let cool for 5 minutes before serving.
