Directions:
In a large bowl, combine the ground chicken, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and beaten egg. Mix until well combined.
Preheat a large skillet over medium heat and add a drizzle of olive oil.
Take a small amount of the chicken mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella in the center and mold the chicken mixture around it to form a ball. Repeat until all the mixture is used.
Carefully place the chicken balls in the preheated skillet and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through.
Transfer the cooked chicken balls to a paper towel-lined plate to drain excess oil before serving.
